We love using our Harissa Olive Oil for a nice bite and an upleveled martini flavor. Most popular in North Africa and the Middle East, Harissa is made with chile peppers (often smoked), garlic, caraway, coriander, and cumin, which are pounded into a paste and left overnight to develop flavor.

How To Fat-Wash Your Spirits with Infused Olive Oil

Supplies:

4 cups (approximately one liter) of quality gin or vodka
2 ounces Beaufort Olive Oil harissa olive oil

Combine the gin or vodka and the harissa olive oil in a sealable container and gently whisk. Let sit at room temperature for a couple of hours to properly infuse.

Place the mixture in the freezer for 1 to 5 days, until the oil solidifies and freezes. Strain the mixture through a fine-mesh strainer lined with a coffee filter or cheesecloth to remove all the frozen oil, leaving the infused spirit behind.
