Harissa Olive Oil
Made famous by our Charred Brussels small plate at Circa 81, Harissa olive oil creates a smokey bite in any recipe. And while many customers ask how they’ll continue to put this infusion to work in their kitchen past the Brussels recipe, we find this to be one of the more versatile flavors. Drizzle it on soup, on pizza, anything that could use a smokey kick. It’s incredibly flavorful, but mild enough for a spice novice.
Lemon Olive Oil
A fruit infusion provides an unexpected twist in your soup recipe where acid provides a welcome layer. Drizzling that subtle sour flavor onto your favorite chicken soup recipe is the equivalent of adding a lemon slice to your tea. But where the flavor really shines is in a crema. Together with Circa 81, we crafted this delicious butternut squash soup recipe using two of our best selling flavors - Blood Orange and Lemon Olive Oils from Beaufort Olive Oil Company.

Butternut Soup with Sage and Lemon Crema
1 Whole Butternut Squash
4 ounces Beaufort Olive Oil Company Blood Orange Olive Oil
Salt
Pepper
1 Quart Crème
½ Cup Brown Sugar
1 Teaspoon Nutmeg
Peel and dice butternut squash, discarding seeds. Boil squash until tender. Strain and return to pot. Add crème, BOOC's Blood Orange Olive Oil, sugar and nutmeg. Blend until smooth. Adjust seasonings with salt and pepper. Serve in bowls topped with Crema.
Crema
2 ounces Beaufort Olive Oil Company Lemon Olive Oil
8 ounces goat cheese, softened
4 ounces sour crème
1 teaspoon minced sage
Mix all ingredients until smooth.
Chipotle Olive Oil
Warmth isn’t just about the temperature of your soup. It’s about the way the flavor makes you feel, and a chipotle drizzle on top of your bowl can take it to the next level. It’s hard to imagine anything that couldn’t be made better by adding chipotle flavor (but we may be a little biased.) The smoky flavor of this infused oil is great for marinating steaks and brushing on grilled chicken or seafood. An excellent dipping oil for artisan breads, finishing oil for soups, pasta or grain dishes, and a wonderful base for dressings and marinades. Drizzle over vegetables or pizza for a spicy meal. Or, use to scramble eggs!
